Ingredients

• Vegetable Oil (For Frying)
• 1/2 lbs. Pecan Pieces
• 2 Cups Flour
• Essence, recipe follows
• 1 large frying chicken, or 2 Breast cut into strips
• Salt & Pepper to taste
• 3 Eggs, beaten
• 4 Tablespoons Milk

• Essence

• 2 1/2 Tablespoons Paprika
• 2 Tablespoons Salt
• 1 Tablespoon Black Pepper
• 1 Tablespoon Onion Powder
• 1 Tablespoon Cayenne Pepper
• 1 Tablespoon Dried Leaf Oregano
• 1 Tablespoon Dried Thyme

Steps

ESSENCE

• Step 1. Combine all the essence ingredients into a food processor and pulse to combine.
• Step 2. Store in an air tight container for future use.

MAIN

• Step 1. Heat the oil, over medium heat, in a large cast iron skillet.
• Step 2. In a food processor, fitted with a metal blade, finely ground the pecans.
• Step 3. Combine the pecans with the flour.
• Step 4. Season with Essence.
• Step 5. Season the chicken with salt and pepper.
• Step 6. Whisk the eggs with 2 tablespoons of the milk.
• Step 7. Dredge the chicken pieces in the pecan flour, coating each piece completely.
• Step 8. Dip the chicken in the egg wash, coating completely and letting the excess drip off.
• Step 9. Dredge the chicken in the pecan flour, for a second time, coating the chicken completely.
• Step 10. Gently lay half of the chicken in the hot oil, skin side down.
• Step 11. Fry the chicken for 6 minutes.
• Step 12. Turn the chicken over and continue to cook for 6 minutes or until the chicken is golden brown and the chicken is completely cooked.
• Step 13. Remove the chicken from the oil and drain on a paper-lined plate.
• Step 14. Season the chicken with Essence.
• Step 15. Continue frying the remaining chicken.
• Step 16. Serve the chicken with Maw Maw's Slaw.
