Green Chili Chicken

This chicken can be used stand alone or inside any kind of tacos, tamales, or burritos.

Ingredients

1 pound Tomatillos
3 Jalapeno Peppers
4 cloves Garlic
1 1/2 tablespoons Olive Oil
2 cups Chicken Broth
2 pounds cooked Chicken Breast
2/3 cup Cilantro
salt & pepper to taste

Steps

Step 1. Shred the chicken.
Step 2. Season the chicken with salt and pepper, and grill or bake at 350 for 30 minutes, or until no longer pink; cool then shred.
Step 3. Rinse and husk the tomatillos and the jalapenos; roast them on a baking sheet for about 5 minutes per side. Cool, then transfer with any juices to a blender and puree.
Step 4. Heat the oil in a medium saucepan over medium high heat. When its hot, add the puree and stir occasionally for about 5 minutes.
Step 5. Add the chicken broth and simmer over medium heat for about 10 minutes.
Step 6. Taste and season with salt, usually about 2 teaspoons.
Step 7. Stir in chicken and cilantro; cool completely.
