Mario Batali’s Basic Tomato Sauce

Use this tomato sauce as the base for a countless number of pasta, meat, or pizza dishes.

Ingredients

1 1/4 Cup Extra Virgin Olive Oil
1 Onion (Spanish or Sweet) (chopped into 1/4 inch cubes)
4 Garlic Cloves (thinly sliced)
3 Tablespoons Fresh Thyme or 1 Tablespoon Thyme (chopped)
1/2 Medium Carrot (shredded)
2 28oz Cans Crushed Tomatoes
Salt to taste

Steps

Step 1. In a saucepan, heat the olive oil over medium heat.
Step 2. Add the onion and garlic, and cook until soft and light golden brown (8-10 Minutes).
Step 3. Add the thyme and carrot and cook 5 minutes more, until the carrot is soft.
Step 4. Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes.
Step 5. Season with salt to taste. This sauce can be refrigerated for 1 week or frozen to 6 months.
