Mario Batali’s Basic Tomato Sauce

Ingredients
  

  • 1 ¼ cup extra virgin olive oil
  • 1 onion chopped into 1/4-inch cubes
  • 4 cloves garlic thinly sliced
  • 3 tbsp Thyme fresh
  • ½ med carrot shredded
  • 56 oz crushed tomatoes
  • salt & pepper to taste

Instructions
 

  • In a saucepan, heat the olive oil over medium heat.
  • Add the onion and garlic, and cook until soft and light golden brown (8-10 Minutes).
  • Add the thyme and carrot and cook 5 minutes more, until the carrot is soft.
  • Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes.
  • Season with salt to taste. This sauce can be refrigerated for 1 week or frozen to 6 months.
