Mexican Roast

This roast can be used stand alone or inside any kind of tacos, tamales, or burritos.

Ingredients

2 medium yellow onions
6 cloves Garlic
8 Tomatillos
3 Roma Tomatoes
4 Poblanos
2 roasted Jalapeno Peppers
1 cup Cilantro
2 teaspoons salt
2 tablespoons black pepper
1 lemon, juiced
2 teaspoons Cumin
2 teaspoons Onion Powder
2 teaspoons Garlic Powder

Steps

Step 1. Choose a beef or pork roast.
Step 2. Combine all the ingredients into a slow cooker.
Step 3. Cook on low heat at least overnight.
Step 4. Remove roast; strain broth from slow cooker and set aside.
Step 5. Pull roast as desired and put in a large bowl; pour broth over roast and let it rest for at least 20 minutes; then drain.
