The day before you are going to fry the chicken; add the chicken, buttermilk, and hot sauce and place the chicken in the refrigerator overnight.
1 qrt buttermilk, 1 whole chicken
Mix together the seasonings.
2 tbsp paprika, 3 tsp garlic powder, 1 tsp onion powder, 3 tsp celery salt, 3 tsp seasoned salt, 3 tsp black pepper, 3 tsp oregano, 3 tsp thyme, 3 tsp cajun seasoning, 1 tsp dried mustard, 3 tsp baking powder, 1/2 cup hot sauce
Remove 1 tablespoon of seasoning and save it for later.
Add the season into the flour. I mix it together with a whisk.
3 cups all purpose flour
Remove the chicken one piece at a time from the buttermilk.
Flour each piece of chicken and leave it to rest on a large baking sheet.
After 15 minutes, flour the chicken again.
Allow the oil to heat to 375 ℉. The temperature will drop as soon as you add the chicken.
Cook chicken about 15 minutes or until golden brown.
Remove the chicken with tongs on to a large baking sheet that has been lined with paper towels.
Season the chicken as soon as it comes out of the oven with the remaining tablespoon of seasoning mixture.
