Cube your steak into 2" size cubes and place in a bowl.
1 Chuck Roast
Lather with oil season generously with your seasoning.
Oil, Seasoning
Preheat smoker to 275 degrees F.
Place the cubes onto the grates making sure to keep separation between them. For a barrel smoker, cook for about 3 hours or a regular smoker 4 hours or until internal temperature is 170 degrees and the bark looks good.
Have your favorite BBQ sauce ready. Get a metal foil pan and toss the meat and sauce together. Cover tightly and place back on the smoker.
Cook until internal temperature is about 205 degrees. For a barrel smoker, that should be about an hour, for a traditional smoker about 2 hours. Check for tenderness besides the temperature.
Remove the foil cover and let it cook another 20 minutes to help set the sauce and serve.
