Ingredients
  

  • 1 Chuck Roast 3-4 lbs
  • Seasoning Your Choice
  • Oil Veggie, Olive, or Canola

Instructions
 

  • Cube your steak into 2" size cubes and place in a bowl.

  • Lather with oil season generously with your seasoning.

  • Preheat smoker to 275 degrees F.
  • Place the cubes onto the grates making sure to keep separation between them. For a barrel smoker, cook for about 3 hours or a regular smoker 4 hours or until internal temperature is 170 degrees and the bark looks good.
  • Have your favorite BBQ sauce ready. Get a metal foil pan and toss the meat and sauce together. Cover tightly and place back on the smoker.
  • Cook until internal temperature is about 205 degrees. For a barrel smoker, that should be about an hour, for a traditional smoker about 2 hours. Check for tenderness besides the temperature.
  • Remove the foil cover and let it cook another 20 minutes to help set the sauce and serve.
