Put the all purpose flour into a gallon zip lock bag. Put the beaten eggs into another gallon bag, and put the panko into yet another gallon bag.
1 cup all purpose flour, 2 eggs, 1 cup panko breadcrumbs
After the chicken is chopped, season the chicken with a generous amount of salt and pepper. Then place all of it into the flour ziplock, close and shake it until its all coated.

Put about 1-1/2 inches of oil in a high sided pan, heat to around 350 degrees.
By hand, remove the chicken out of the flour and shake as much excess as possible and put all the chicken into the egg bag, close and shake until its all coated.
Remove the chicken in small batches, and toss into the panko, shake in the process to keep the clumping as low as possible. Its okay if some does clump.
After the oil is hot, add the chicken one piece at a time into the hot oil and fry for a couple of minutes, turning if necessary. Let it drip dry in a "keep warm" oven on a metal tray. Repeat in batches until its all cooked.
