Ingredients
  

  • 1 lb velveeta cheese cubed
  • 1 can (10 oz) diced tomatoes with green chilies like Rotel
  • ½ cup milk optional, for creaminess
  • ½ tsp chili powder optional
  • ½ tsp cumin optional
  • Cilantro fresh, for garnish
  • Tortilla Chips

Instructions
 

  • Prepare the Ingredients:- Cube the 1 lb velveeta cheese for easier melting.- Open the can of diced tomatoes and drain if you prefer a thicker queso.
  • Melt the Cheese:- In a medium saucepan over low heat, combine the cubed Velveeta cheese and the1 can (10 oz) diced tomatoes with green chilies (with juices).- Stir continuously until the cheese is melted and the mixture is smooth.
  • Add Milk (Optional):- If you want a creamier consistency, slowly stir in the 1/2 cup milk until you reach your desired thickness.
  • Season (Optional):- Add 1/2 tsp chili powder and 1/2 tsp cumin for extra flavor, adjusting to taste.
  • Serve:- Transfer the queso to a serving bowl and garnish with fresh Cilantro if desired.- Serve warm with Tortilla Chips for dipping.

Notes

  • For a spicier version, consider adding jalapeños or hot sauce.
  • You can also customize the recipe by adding cooked ground beef or sausage for a heartier dip.
