Panko Fried Chicken

Ingredients
  

  • 1 lbs chicken breast cut into small bit size pieces
  • 1 cup all purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs

Instructions
 

  • Put the all purpose flour into a gallon zip lock bag. Put the beaten eggs into another gallon bag, and put the panko into yet another gallon bag.

  • After the chicken is chopped, season the chicken with a generous amount of salt and pepper. Then place all of it into the flour ziplock, close and shake it until its all coated.

  • Put about 1-1/2 inches of oil in a high sided pan, heat to around 350 degrees.
  • By hand, remove the chicken out of the flour and shake as much excess as possible and put all the chicken into the egg bag, close and shake until its all coated.
  • Remove the chicken in small batches, and toss into the panko, shake in the process to keep the clumping as low as possible. Its okay if some does clump.
  • After the oil is hot, add the chicken one piece at a time into the hot oil and fry for a couple of minutes, turning if necessary. Let it drip dry in a "keep warm" oven on a metal tray. Repeat in batches until its all cooked.
