Veggie Noodle Stir Fry (Lo-Mein)

There are a few steps, but well worth the effort.

Ingredients

1 lb. Spaghetti
3 tbsp Veggie Oil (Not EVOO)
2 large Eggs, Beaten
2 baby bok choy, or 1 large, thin sliced
1 Red Bell Pepper, thin sliced
1 Bunch scallions, cut 3 in
1/2 cup carrots, thin sliced
1/2 cup snow peas, cut 1 in
Ginger, fresh, grated
2 cloves garlic
1/4 cup soy sauce
3 tbsp black bean sauce
1 lime, juiced
1 tbsp hot pepper sauce
1 tbsp honey (or sugar)
1 tbsp sesame oil.

Steps

Step 1. Cook pasta as directed.
Step 2. In a large skillet heat 1 tbsp of the oil over high heat.
Step 3. Add eggs and scramble until firm; transfer to a plate.
Step 4. Add the remaining oil, then all of the veggies, except ginger and garlic.
Step 5. Stir fry 2 minutes.
Step 6. Add the ginger and garlic.
Step 7. Stir fry 1 more minute.
Step 8. In a small bowl or jar, stir together the soy sauce, black bean sauce, lime juice, hot sauce, honey or sugar, and sesame oil.
Step 9. Toss the pasta with the sauce, veggies and top with the egg.
Step 10. Serve.
