Veggie Noodle Stir Fry (Lo-Mein)
Ingredients
- 1 lb spaghetti
- 3 tbsp vegetable oil
- 2 lrg eggs beaten
- 2 baby bok choy thinly sliced
- 1 red bell pepper thinly sliced
- 1 bunch scallians cut 3-in
- ½ cup carrots thinly sliced
- ½ cup snow peas cut 1-in
- dash ginger fresh grated
- 2 cloves garlic
- ¼ cup soy sauce low sodium
- 3 tbsp black bean sauce
- 1 lime juiced
- 1 tbsp hot pepper sauce
- 1 tbsp honey or sugar
- 1 tbsp sesame oil
Instructions
- Cook pasta as directed.
- In a large skillet heat 1 tbsp of the oil over high heat.
- Add eggs and scramble until firm; transfer to a plate.
- Add the remaining oil, then all of the veggies, except ginger and garlic.
- Stir fry 2 minutes.
- Add the ginger and garlic.
- Stir fry 1 more minute.
- In a small bowl or jar, stir together the soy sauce, black bean sauce, lime juice, hot sauce, honey or sugar, and sesame oil.
- Toss the pasta with the sauce, veggies and top with the egg.
- Serve.
