
The Best Tamale Masa
This is great with any filling.
Ingredients
- 1 ½ cups lard or a 1 lb. box
- 1 ½ tsp baking powder
- 3 ½ cups masa harina dried
- 2 ¼ cups hot water
- 2 tsp salt
- 1 ½ cups chicken broth
Instructions
To Make Masa
- In a large bowl, combine the masa with the hot water; stir to combine.3 1/2 cups masa harina, 2 1/4 cups hot water
- With an electric mixer on medium high speed, beat the lard with the salt and baking powder until light in texture, about 1 minute.1 1/2 cups lard, 2 tsp salt, 1 1/2 tsp baking powder
- Continue beating as you add the masa mixture in three parts.
- Reduce speed and add broth.1 1/2 cups chicken broth
- Taste to batter and season with more salt if needed.
- Place in the fridge for a couple of hours for the lard to firm up again. Then blend again adding more chicken broth until it softens up. Repeat this step as much as possible. This will deepen the flavor of your masa.
Notes
- For the lightest textured masa, refrigerate for at least an hour, then re beat, adding a little more broth to bring the masa back to the consistency before.
