Veggie Spaghetti Sauce

This is a non-meat spaghetti sauce, that is really filling.

  • 56 oz crushed tomatoes
  • 3 whole zucchini sliced
  • 2 whole yellow squash sliced
  • 8 oz mushrooms sliced
  • 2 whole carrots chopped
  • 3 cloves garlic diced
  • ½ tsp basil
  • ½ tsp oregano
  • ½ tsp thyme
  • salt, pepper, & red pepper flakes to taste


  • In a 4 quart slow cooker, combine tomatoes, zucchini, squash, mushrooms, carrots, garlic, herbs, and spices.
  • Cover and cook on low for 7 hours.
  • Serve over pasta.
  • Sprinkle with cheese.


You can add Italian sausage if you would like.
